Vinification involves destemming and soft pressing of the grapes, followed by maceration at 28°C for approximately 12 days. Malolactic fermentation takes place in stainless steel, ensuring greater freshness and aromatic complexity. The wine then ages for 6 months in large 25-hl barrels, which contribute to developing a balanced and harmonious structure. Cusumano Altamora Etna Rosso is a versatile wine, ideal for pairing with cured meats, pasta dishes, red meats, game, and aged cheeses.
