With an alcohol content of 12.5%, this wine stands out for its organic character and the care with which it is produced. The soil on which the vines grow is a mixed calcareous-sandy hillside, rich in fossils with small portions of chalk. After destemming and crushing, the crushed grapes undergo a pre-fermentation cryomaceration at 4°C for 12/24 hours. They are then transferred to the press where they are gently pressed at up to 0.8 atm. After cold static decantation, the must is fermented in stainless steel tanks at temperatures between 14 and 15°C.
