Description

Nicosia Lenza di Munti Etna Bianco is a highly prized Sicilian wine, belonging to the Etna Bianco DOC denomination. This wine is made from 80% Carricante grapes and 20% Catarratto grapes, sourced from the southeastern slopes of Etna. Its alcohol content is 12.5%. The volcanic soil gives the wine a unique and distinctive minerality. The vinification process begins with a 24-hour cold maceration (cryomaceration), followed by gentle pressing. After 48 hours of static decantation, the must ferments for approximately 20-25 days at a controlled temperature of 15-18°C. Maturation takes place in stainless steel tanks on fine lees, followed by approximately two months of bottle aging. This process gives the wine an elegant structure and remarkable aromatic complexity. Nicosia Lenza di Munti Etna Bianco is ideal as an aperitif or paired with fish dishes, sushi, fried seafood, and vegetable tempura. It pairs perfectly with appetizers, fish, shellfish, mollusks, and seafood. The recommended serving temperature is 8-10°C (46-50°F) to best enhance its sensory characteristics. This wine embodies the essence of Sicilian winemaking tradition, with a perfect balance of freshness and complexity.

Nicosia

Today, Cantine Nicosia is a dynamic, modern, and efficient company, capable of looking towards the future while fully respecting tradition. At its helm, Carmelo Nicosia is assisted by his two sons, Francesco and Graziano, a close-knit team of young collaborators, and last but not least, the winemaker Maria Carella, the authentic interpreter of the company's production philosophy. Cantine Nicosia favors the most valuable native grape varieties and the international varieties that have best adapted to Sicily, promoting the territory while fully respecting the environment and enhancing the raw material with a careful selection of grapes and constant attention to work in the cellar. A long journey towards excellence, to produce wines worthy of representing, in Italy and the world, the best Sicilian winemaking tradition. Producing good and healthy wines, respecting the environment: Nicosia has fully embraced the cause of organic and sustainability, to combine environmental protection and food safety, with the aim of bringing to consumers' tables a "zero impact" wine. Thanks to precision viticulture techniques, satellite mapping of vineyards, biotechnologies, and the adoption of a protocol based on the most advanced principles of sustainability, the company has managed to eliminate the use of agrochemicals and fertilizers.
