Vinification involves a 48-hour pre-fermentation maceration, followed by alcoholic fermentation at a controlled temperature between 22 and 26 degrees Celsius, with 20 days of maceration on the skins. Malolactic fermentation is complete, giving the wine greater softness and roundness. The wine matures for 18 months, partly in tonneaux and partly in stainless steel, followed by at least 12 months of bottle aging. This process gives the wine aromatic complexity and a well-balanced tannic structure. "Don Vicè" is a versatile wine, ideal with red meats, white meats, cured meats, and aged cheeses. The recommended serving temperature is between 14 and 18°C (57 and 64°F) to best enhance its sensory characteristics. Gurrieri

We are in the countryside of the Iblei Mountains, in the fertile Val di Noto, in the area of the only Sicilian DOCG, that of Cerasuolo di Vittoria. The family agricultural tradition thus becomes a business activity but niche, to produce wines of great value, capable of respecting the land of origin and enhancing it through its best fruits. For each label, small quantities are produced: about 3000 bottles. Thus was born the "collection" Gurrieri which becomes a reflection of the agricultural and peasant vocation of Ragusa. The family today works together to produce Docg and Igt wines from Sicily, cultivates organically and enhances native vines such as Nero d'Avola, Frappato, Grillo and an international vine, Syrah, well adapted to Sicilian soils and climate. Dad Vincenzo, Don Vicè, to whom some wines are dedicated, continues his work in the vineyard as a tireless and passionate worker. Mom Graziella takes care of the administrative part of the company and takes care of the family. To her, the children dedicate the Classic Method Sparkling wine from Nero d'Avola and Frappato grapes vinified in white, which takes the name of "Donna Grazia". The wines tell the unchanged beauty of the peasant tradition in the uncontaminated nature of the Iblei Mountains. In the vineyards, cultivated organically and with respect for the land, the rows embroider the slopes of a land with clayey reflections, a natural "paradise" for the vine, with the dry stone walls of white stone that enrich the landscape. The soils of limestone origin give richness and complexity. The ventilated Mediterranean climate, here characterized by significant temperature changes, contributes to give the product strength, vigor, unique aromas and flavors.
