Description

Mimmo Paone Mamertino Bianco is a highly prized Sicilian wine, belonging to the Mamertino Bianco DOC denomination. This wine is a blend of 60% Inzolia , 25% Catarratto , and 15% Grillo , native grape varieties from the Messina region of Sicily, Italy. With an alcohol content of 13%, Mamertino Bianco stands out for its fresh and aromatic character. The grapes come from vineyards grown on medium-textured clay soils, which give the wine a balanced structure and good minerality. Vinification involves destemming followed by an 8-hour cold maceration and a gentle pressing, yielding approximately 60% free-run must. Fermentation takes place in stainless steel at a controlled temperature of 15°-16°C, to preserve the grapes' fresh, fruity aromas. The wine then ages in stainless steel for approximately three months and then in bottle for another two months, achieving a perfect balance between freshness and complexity. Mamertino Bianco is a versatile wine, ideal for pairing with fish, shellfish, molluscs, and seafood. Its freshness and balanced acidity make it perfect for enhancing the delicate flavors of these foods. It is best served at 8-10°C to fully appreciate its sensory characteristics. This wine represents an excellence of the Sicilian winemaking tradition, capable of captivating even the most discerning palates with its elegance and authenticity.

Mimmo Paone

The Paone family has been living among the vines for over 70 years, first producing rootstocks, then selling wine, and finally producing and marketing it in bottles. Our company is led by the third generation of the Paone family, with a passion for producing the highest quality wines. Mimmo Paone, the founder of the company, was the first winemaker in the province of Messina in 1974 and has passed on his knowledge and passion for wine to subsequent generations. We pursue a constant evolution dedicated to development and quality, enhancing native varieties such as Nerello Mascalese and Cappuccio, Nero d’Avola, Grillo and Insolia, but especially recognizing the potential of the local Nocera..
