After pressing, the must undergoes a long cold stabilization (5°C) to extract the typical varietal characteristics of the Grillo and the aromatic precursors, which will develop during alcoholic fermentation. The fermentation takes place in steel, maintaining a temperature of 15-16°C, and lasts for about 10-12 days. Subsequently, the wine undergoes a natural "elevage" on the fine lees for about 5 months, before being bottled. In the bottle, it rests for another 2 months before being marketed. Luna Su Marte Grillo pairs perfectly with light and tasty dishes, such as fried fish, which enhance its freshness and liveliness. Also excellent with first courses based on fresh vegetables, such as a pasta with zucchini, cherry tomatoes and basil, or with fresh and delicate cheeses, like buffalo mozzarella or goat cheese and should be served at a temperature of 8/10 °C. It presents itself to the eye with a straw yellow color, on the nose there are notes of citrus and delicate nuances of exotic fruit. On the palate, it offers an experience of great freshness and finesse with a persistent mineral and sapid finish. Diego Fabrizio Angileri

The company Diego Fabrizio Angileri was born in Sicily, from our dream of creating a small, but authentic, production of artisanal wines from family lands. The result of a harmonious encounter between tradition, nature and a touch of innovation. The family vineyards, in the process of organic conversion, located in the hilly hinterland of Marsala, extend over a united surface of about 30 hectares, of which today about 5 hectares are managed for the family business. Here they grow Carricante, Catarratto, Grillo and Syrah. To these is added about one hectare of olive trees of the native Biancolilla variety.
