Description
Baglio Aimone
Imagine a place where time seems to have stopped, immersed in the heart of the WWF Oasis Lago Preola and Gorghi Tondi, in Mazara del Vallo, in Western Sicily. Welcome to Winery Baglio Aimone, a winemaking jewel managed with passion and dedication by two young entrepreneurs, committed to combining tradition and innovation to offer excellent wines. The wonderful natural landscape of the surrounding vineyards, merges with the architectural heritage of the place due to the presence of the eighteenth-century Baglio. The Baglio, which stands on top of a charming hill in the heart of the Reserve, enjoys a breathtaking view, dominating undisturbed the vineyards, the Preola lake and the surrounding Mediterranean scrub. Here, within the restored historic Baglio, is the Baglio Aimone winery. Founded in 2012, it was taken over by Caterina and Fabio Marino in 2024, who thus became custodians of one of the most fascinating landscapes of Western Sicily. The winery consists of about 30 hectares of vineyards, which develops regularly all around the Baglio and is characterized mostly by Grillo and Zibibbo grapes. The training system is Guyot espalier with an average density of 3500 stocks and a yield of 70 quintals per hectare. To a lesser extent, Catarratto and Nerello Mascalese grapes are also grown for the production and completion of the line proposed by our company. The entire area in which the vineyards extend is under protection as a natural beauty of the territory of Mazara del Vallo, and is included with reserve constraint among the protected natural areas of the Regional Plan of Parks and Reserves, entrusted and managed by the WWF. The harvest is carried out exclusively by hand in a box, through rigorous selection of individual bunches. The vinification takes place in steel after soft pressing and cryomaceration on the skins, with must at natural decantation; the refinement proceeds for at least two months in bottle at controlled temperature.
