Colomba Bianca 595 Blanc de Blanc Millesimato is a highly prized Sicilian sparkling wine, produced exclusively with 100% Chardonnay grapes from the Trapani area. This sparkling wine represents the pinnacle of Sicilian viticulture, with an alcohol content of 11% and produced using the Method Classico Brut method. Its production follows rigorous organic criteria, ensuring a natural and environmentally friendly product. The local chalky limestone soil gives the wine a unique and distinctive minerality. The sparkling wine process begins with the manual harvesting of the Chardonnay grapes, which are then meticulously processed. Pressing is gentle and gradual, extracting only the highest-quality must. The first phase of the process involves blending the base wines to obtain the final cuvée. With the addition of the liqueur de tirage, the secondary fermentation begins, and the wine is bottled in traditional champagne bottles, sealed with a crown cap. During this period, the secondary fermentation takes place. Secondary fermentation in the bottle lasts 30 days at a temperature of 14°C, while the wine ages on the lees for at least 24–36 months. At disgorgement, the liqueur de expédition is added, and finally the wine is corked and bottled. Colomba Bianca 595 Blanc de Blanc Millesimato ages in the bottle for 36–40 months, developing complexity and refinement. This sparkling wine is ideal as an aperitif and pairs perfectly with fish-based first and second courses, seasonal vegetables, and traditional Mediterranean dishes. It also pairs excellent with appetizers, first courses, fish, and vegetables. The recommended serving temperature is 6°C to fully appreciate its sensory characteristics.
