The grapes are hand-picked and pressed whole, with a gentle pressing of the bunches. Fermentation takes place at a controlled temperature of 16-18°C in stainless steel tanks. The wine is then left on its lees until late spring, when it is made into a sparkling wine. After making the sparkling wine, the wine ages in the bottle on its selected lees for 24 months, before being disgorged, dosed, and left to rest for approximately 3 months. This process gives the wine a unique complexity and finesse. Benanti Noblesse is ideal for pairing with appetizers, shellfish, and seafood, served at 6°C. The volcano and its terroir indeed present a significant heterogeneity, which makes each slope or area particularly suitable for one grape variety rather than another. Etna is over 3000 meters high: its slopes present substantial differences for viticultural activity, varying in exposure, temperature range, altitude, soil, brightness, rainfall, ventilation, influence of the sea, cultivation system. Benanti is the only Etna winery present on every side of the DOC. Typicality, elegance, character, longevity: this is what we seek.
