Made from a blend of 55% Pinot Nero and 45% Chardonnay , this sparkling wine hails from the hills of Palermo, Sicily, Italy. With an alcohol content of 12.5%, Cusumano 700 slm is crafted using the Method Classico Brut, which gives the wine unique complexity and finesse. The clay-loam soil on which the vines grow contributes to the wine's solid structure and distinctive character. Pressing the whole grapes and using only the first free-run must helps avoid tannins and preserve the wine's natural acidity. After static decantation and low-temperature fermentation, the wine rests on the fine lees for approximately 6 months. It is then filtered and bottled for secondary fermentation at 13°C. The bottles rest on the lees in the cellar for 36 months, a process that enriches the wine with complex aromas and a creamy texture. Disgorging occurs after this long period of aging, ensuring a final product of the highest quality. Cusumano 700 slm pairs perfectly with fresh cheeses, cured meats, fish, and shellfish, making it ideal for aperitifs and elegant dinners. The recommended serving temperature is 6°C, to best enhance its sensory characteristics.
