The vineyards grow on sub-alkaline clay-loam soils, which give the wine a solid structure and unique character. Upon arrival at the winery, the bunches are further selected on a vibrating table, and then the berries are selected with a state-of-the-art destemmer, capable of eliminating green and overripe grapes. Fermentation takes place in stainless steel, with maceration on the skins for approximately 14 days at a temperature of 28-30°C. Aged for 14 months in new French oak barriques, followed by a further two years in the bottle. This process gives the wine extraordinary elegance and aromatic complexity. Donnafugata Mille e una Notte is ideal with roasts, braised meats, game, and mature cheeses. It also pairs perfectly with red meats and game, enhancing the intense flavors of these dishes. The recommended serving temperature is between 14 and 18°C.
