Description

The Sicilian wine Distilleria Giovi Galatìa Etna Bianco is an Etna Bianco DOC, composed of 85% Carricante grapes and 15% Grecanico grapes, sourced from the northern slopes of Etna. This white wine, produced in Sicily, Italy, has an alcohol content of 13%. Its production is artisanal, and the volcanic soil gives the wine unique characteristics. The vinification process involves cold cryomaceration for 12 hours, followed by separation of the skins and fermentation, which occurs with the aid of selected yeasts at a controlled temperature of 15°-16°C. This process is essential for preserving the aromas and giving the wine greater structure. It is aged in stainless steel tanks for approximately 5 months, after which the wine is ready for bottling. Distilleria Giovi Galatìa Etna Bianco is ideal for pairing with fish and white meat dishes, thanks to its freshness and aromatic complexity. The recommended serving temperature is 8-10°C, to best enhance its sensory characteristics. This wine represents a pinnacle of Sicilian viticulture, perfectly expressing Etna's unique terroir.

Distilleria Giovi

Our vineyards, from which we produce our four wine labels, are located in the Municipality of Randazzo, in the districts of Allegracore, Passopisciaro and Pirao. They are north-facing, at about 700/950 meters above sea level on volcanic soil at the foot of Etna. The Master Distiller Giovanni La Fauci personally oversees the entire production process, from the care of the vineyard, cultivated naturally without the use of chemical products, to the refinement in the bottle.
