Alcoholic fermentation takes place in stainless steel at a controlled temperature of 15-16°C, followed by aging for 6 months, 85% of which in stainless steel and 15% in second-use French oak barriques. The wine then ages for a further three months in the bottle. This process gives the wine a balanced structure and remarkable elegance. Donnafugata Vigna di Gabri is ideal with seafood first courses, flans, and baked fish. It also pairs perfectly with delicate meats such as scallops in white wine. It is a versatile wine that lends itself well to appetizers, first courses, fish, shellfish, white meats, and vegetables.
