Vinification involves destemming and cold maceration for 8 hours, followed by gentle pressing and static clarification of the must. Fermentation takes place in stainless steel at a controlled temperature of 16-18°C, with malolactic fermentation taking place. The wine ages on the lees in stainless steel tanks for 12 months, followed by a further 12 months of bottle aging. This process gives the wine a unique complexity and depth. It is ideal with fish and white meat dishes, served at a temperature of 8-10°C. The producing winery is a member of FIVI , the Italian Federation of Independent Winemakers, thus guaranteeing an authentic, high-quality product.
