Terrazze dell'Etna Blanc de Noir Rosé 50 months is a Sicilian sparkling wine of great elegance and complexity. Made with 80% Pinot Nero and 20% Nerello Mascalese , this sparkling rosé comes from the northern slopes of Etna, an area renowned for its high-quality viticulture. With an alcohol content of 12.5%, the wine is produced using the classic brut method, which involves a second fermentation in the bottle. The volcanic soil, rich in gravel, gives the wine a unique and distinctive minerality. A light one-hour maceration in the press and gentle pressing, resulting in a 40% yield, allow us to extract only the best from the red grapes, which are then vinified as a rosé at a controlled temperature. After vinification, the wine is aged on the fine lees for 36 months, a process that takes place in a temperature-controlled cellar at 15°C. This long aging on the lees gives the wine aromatic complexity and an enviable structure. Terrazze dell'Etna Blanc de Noir Rosé 50 months is perfect with shellfish, including raw shellfish, fish-based pasta dishes, fish soups, or the typical pistachio arancini of Etna. It pairs splendidly with fish, crustaceans, mollusks, and seafood, enhancing the delicate and refined flavors of these dishes. To fully appreciate its qualities, we recommend serving it at a temperature of 6°C. This sparkling wine represents the essence of Sicilian winemaking tradition, combining the richness of the Etna terroir with winemaking mastery.
