Description

Cantoneri Tenuta della Dainara is a highly prized Sicilian wine, known as Etna Bianco DOC. This wine is made from 100% Carricante grapes, grown on the northern slopes of Etna. This white wine perfectly represents Sicily's winemaking tradition, with an alcohol content of 12.5%. The grapes grow on sandy loam soil with a highly variable presence of gravel, which gives the wine a unique complexity. Harvest takes place in the tenth week of August, when the grapes are destemmed and macerated for 8-10 hours at a controlled temperature. The wine then ages for at least 5 months sur lies and then in stainless steel tanks, before further aging for 6 to 18 months in bottle. This winemaking process gives Cantoneri Tenuta della Dainara an elegant structure and remarkable aromatic depth. It's a wine that pairs perfectly with fish and shellfish dishes, enhancing the flavors of the sea with its freshness and minerality. The ideal serving temperature to best appreciate its characteristics is between 8 and 10°C.

Cantoneri

Cantoneri was born in 1997, when Carmelo and Rosa purchased a rustic villa in Solicchiata, surrounded by a plot with an old vineyard known as "Tenuta della Dainara". Since 2011, a process of expansion and restoration of the old facilities has been started. Today the company expands, between 650 and 700 m. s.l.m. for about 20 hectares, of which 11 are vineyards. The name "Cantoneri" dates back to an ancient property, located in the Enna area, of an ancestor of the Assennato family and his three brothers. Given the height of the owners, it was called "Land of the four corners", referring to the corners of the buildings, i.e. the corners.
