The resulting wine ages on the fine lees for 10 months, until August, with bâtonnage every two weeks for the first six months. This process gives the wine remarkable complexity and structure. Planeta Eruzione 1614 Riesling is ideal with appetizers, first courses, fish, shellfish, cured meats, and vegetables, and should be served at 8-10°C.
