After a decay filtration lasting several weeks, the wine undergoes manual bâtonnage every 15 days, a process that enriches the wine with complexity and structure. It ages in barrels for over 20 months, followed by an additional six months of bottle aging, allowing the wine to develop its unique aromatic bouquet. With an alcohol content of 12.5%, this wine presents a fresh and mineral aromatic profile, typical of Salina's volcanic soils. It is ideal for pairing with appetizers, fish, shellfish, molluscs, and seafood, enhancing the flavors of the sea with its freshness and savory character. Between Sky and Sea, Caravaglio The story of an island and one of its main interpreters Nino Caravaglio, vigneron and islander. The island environment allows for a viticulture - and agriculture - very respectful of nature. The mild climate, the absence of significant pathological problems, the sun and the clean air create favorable conditions for the reduction of any treatment. Starting from this situation, however, we wanted to do more. We chose to follow an agriculture constantly in harmony with nature and the landscape. The company, to underline this choice, has been organically certified since 1989. Those were years when the current certification system did not exist in Italy. Since 1994 the company Caravaglio is certified by Ecocert, now become Ecogroup. "Beyond certification, producing in full respect of the earth is for us an ethical imperative" says Nino Caravaglio.
