This wine comes from the northern slope of Mount Etna, an area renowned for its volcanic viticulture. It is a macerated white wine, produced in Sicily, Italy, with an alcohol content of 12.5%. The wine is organic and artisanal, with no added sulfites. The Carricante grapes were pressed whole bunches in a large used oak barrel, where fermentation occurred completely spontaneously. The Catarratto grapes were also pressed whole bunches and fermented in chestnut barrels. The Grillo , which makes up 30% of the blend, was left to macerate on the skins for a week and then pressed in a large chestnut barrel. The various musts were dry-fermented, underwent malolactic fermentation, and were then blended in late November. The finished wine remained on the lees and was bottled without fining or filtration. This wine pairs perfectly with fish and white meats and should be served at 10-12°C. The winery adheres to sustainable and environmentally friendly practices, guaranteeing a high-quality and authentic product.
